Ingredients
  

  • 2 and 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup unsalted butter chilled and diced
  • 1/2 cup ice water
  • 6 to 8 Granny Smith apples peeled, cored, and sliced
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter
  • 1 egg yolk
  • 1 tablespoon water
Makes: 9inch round

Instructions
 

  • To make the crust, combine flour, salt, and sugar in a large bowl. Add butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, stirring until the dough comes together. Divide into two halves, wrap in plastic, and refrigerate for at least 1 hour.
  • Preheat the oven to 425°F (220°C).
  • Roll out one dough half on a floured surface to fit a 9-inch pie plate. Place crust in pie plate.
  • In a bowl, combine sliced apples, sugar, flour, cinnamon, and nutmeg. Pour into the crust. Dot with pieces of butter.
  • Roll out the second half of the dough and place over the filling. Trim, seal, and crimp the edges. Make several small slits in the top crust to allow steam to escape.
  • Beat egg yolk and water. Brush over the top crust.
  • Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and bake for another 45 minutes, or until the crust is golden brown and the filling is bubbly.
  • Cool on a wire rack before serving.
