This Christmas Smoked Turkey Crown with Herb Butter & Applewood creates juicy, flavour-packed turkey crown perfect for Christmas Day. Easier to cook than a whole bird and ideal for BBQ smoking.

Preheat BBQ to 165–175°C using indirect heat.
Mix butter, garlic, herbs, lemon zest, salt and pepper.
Loosen the skin and spread half the butter underneath.
Coat the outside with remaining butter + olive oil.
Place turkey on the cool side of the grill.
Add 1–2 chunks of applewood. Add more when you feel it's required but do not over load the bbq. Too much smoke will give a harsh flavour, you just want to aim for a gentle aftertaste.
Cook until the breast reaches 74°C internal temperature.

Rest the turkey for 30–45 minutes before carving.
