Description: A succulent roast chicken with a crispy skin, seasoned with traditional herbs and spices. Perfect for a hearty family dinner.

Ingredients
  

  • 1 whole chicken about 4 to 5 pounds
  • 2 tablespoons olive oil
  • 1 tablespoon sea salt
  • 1/2 tablespoon freshly ground black pepper
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 lemon halved
  • 4 garlic cloves peeled
  • 1 onion quartered

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Remove the chicken giblets. Rinse the chicken inside and out and pat dry with paper towels.
  • Rub the chicken all over with olive oil, then season inside and out with salt, pepper, thyme, and rosemary.
  • Stuff the cavity with the halved lemon, garlic cloves, and quartered onion.
  • Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.
  • Place the chicken in a roasting pan and roast for 1 hour and 30 minutes, or until the juices run clear when you cut between a leg and thigh.
  • Remove the chicken from the oven and let it rest for 10 minutes before carving.
